The secret to good bread - like so many other things - is listening.
Acorns are alright for foraging pigs, but with an oven, or hearth, or access to fire in general, we must heed our obligation to bake our ground flours.
Bill, what would you suggest for someone who already has some acorn flour? I have about two cups that we made in the fall and are not sure what the best thing to make would be. Any suggestions?

ReplyDeletei would try making some acorn tortillas ... then stuff them with something wild ... boar, goat, venison, rat
